Pan-Seared Salmon Florentine is a creamy, elegant one-pan dinner featuring seared salmon fillets in a rich spinach and mushroom cream sauce. Ready in under 30 minutes, this comforting yet impressive recipe is perfect for weeknights, date nights, or special occasions.

Ingredients

  • 4 salmon fillets, skin off
  • ¼ teaspoon salt
  • ¼ teaspoon red chili flakes
  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 1 tablespoon minced garlic
  • ½ lb sliced mushrooms
  • 1¼ cups half & half
  • 1 tablespoon cornstarch
  • 2 tablespoons grated Parmesan cheese
  • 7 oz baby spinach
  • ¼ teaspoon red chili flakes (optional, for heat)
  • 1 tablespoon lemon juice
  • Salt, to taste

Instructions

  1. Heat the vegetable oil in a large non-stick pan over medium-high heat.
  2. Season the salmon fillets with salt and red chili flakes.
  3. Sear salmon for about 5 minutes per side until golden and cooked through. Remove and set aside.
  4. In the same pan, sauté the onion until translucent (3–4 minutes), then add garlic and cook for 1 more minute.
  5. Add mushrooms and cook until browned and tender, about 5 minutes.
  6. In a small bowl, whisk cornstarch into the half & half. Pour it into the pan, add Parmesan, and simmer until thickened.
  7. Stir in spinach and cook until wilted. Season with more chili flakes (optional), salt, and lemon juice.
  8. Return the salmon to the pan, spoon sauce over the fillets, and serve hot.
