These Oreo Cheesecake Cookie Bars are rich, creamy, and indulgent with a chewy cookie dough base, velvety cheesecake layer, and crunchy Oreo topping. A foolproof dessert perfect for parties or cozy nights in, it combines the best of cookies and cheesecake in every bite.

Ingredients

  • 1 roll pre-made cookie dough
  • 16 oz cream cheese, softened
  • ½ cup granulated sugar
  • 2 large eggs
  • ½ tsp vanilla extract
  • ½ cup sour cream
  • 16 Oreo cookies, crushed
  • ½ cup semi-sweet chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper, leaving overhang for easy removal.
  2. Press cookie dough evenly into the bottom of the pan and bake for 10 minutes. Let cool slightly.
  3. In a bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well. Stir in vanilla and sour cream until silky.
  4. Sprinkle half of the crushed Oreos over the cookie base. Pour cheesecake mixture on top and spread evenly. Top with remaining Oreos and chocolate chips.
  5. Bake for 35–40 minutes until edges are set and center slightly jiggles.
  6. Cool to room temperature, then refrigerate at least 3 hours or overnight before slicing.
