Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes (14.5 oz)
  • 2 tablespoons tomato paste
  • 4 cups beef broth
  • 1½ cups elbow macaroni (uncooked)
  • 2 cups shredded cheddar cheese
  • 1 cup milk or heavy cream
  • Salt and pepper, to taste
  • 1 teaspoon paprika
  • 1 teaspoon mustard (optional)
  • 1 tablespoon olive oil or butter

Instructions

  1. In a large pot, heat olive oil or butter over medium heat. Sauté onion until softened, then add garlic and cook 1 minute more.
  2. Add ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat if needed.
  3. Stir in tomato paste, diced tomatoes, paprika, mustard, salt, and pepper. Cook for 2–3 minutes to build flavor.
  4. Pour in beef broth and bring to a boil.
  5. Add elbow macaroni and reduce heat to a simmer. Cook for about 10 minutes, or until pasta is tender.
  6. Lower heat, stir in milk or cream, then add shredded cheddar cheese. Stir until melted and smooth.
  7. Adjust seasoning to taste. Serve hot, topped with extra cheese if desired.
