One Pan Sausage, Green Beans, and Potatoes is an easy, hearty dinner made with juicy sausage, tender potatoes, and crisp green beans roasted together on a single sheet pan. This simple one-pan recipe is full of flavor, customizable, and perfect for busy weeknights when you want comfort food with minimal cleanup.

Ingredients

  • 1 lb baby potatoes, halved or quartered
  • 8 oz green beans, trimmed
  • 1 small yellow onion (about 1 cup), sliced or wedged
  • 1 lb pre-cooked andouille sausage or kielbasa, sliced into 1-inch pieces
  • ¼ cup olive oil
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1 tsp Italian seasoning blend
  • ½ tsp black pepper

Instructions

  1. Preheat Oven: Heat oven to 400°F. Line a large sheet pan with parchment paper.
  2. Season Potatoes: Toss potatoes with olive oil, garlic powder, salt, Italian seasoning, and pepper.
  3. Roast Potatoes: Spread potatoes on sheet pan and roast for 20 minutes.
  4. Add Sausage & Veggies: Add sausage, green beans, and onion to the pan. Toss to coat in seasonings.
  5. Finish Roasting: Roast 20–25 minutes more, stirring halfway, until potatoes are tender and sausage is crispy.
  6. Serve: Serve hot with optional lemon juice or Parmesan.

Notes

  • Swap sausage for smoked turkey sausage or bratwurst.
  • Add bell peppers or carrots for more veggies.
  • For a spicy version, sprinkle with red pepper flakes.
