A comforting one-pan dinner made with tender chicken, fluffy rice, and a sweet-and-smoky honey BBQ sauce, all cooked together for maximum flavor with minimal cleanup.

Ingredients

  • 1 lb boneless, skinless chicken thighs or breasts
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 3 garlic cloves, minced
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 0.5 cup BBQ sauce
  • 2 tbsp honey
  • 1 tsp smoked paprika
  • 0.75 tsp salt
  • 0.5 tsp black pepper
  • 1 cup shredded cheese
  • 2 tbsp fresh parsley or green onions, chopped

Instructions

  1. Heat olive oil in a large skillet or deep pan over medium heat.
  2. Season chicken with salt, black pepper, and smoked paprika.
  3. Sear the chicken on both sides until lightly browned, then remove and set aside.
  4. In the same pan, add diced onion and cook until softened.
  5. Stir in minced garlic and cook until fragrant.
  6. Add rice and stir to coat it with the flavors in the pan.
  7. Pour in chicken broth.
  8. Mix BBQ sauce and honey together, then stir into the pan.
  9. Place chicken back on top of the rice mixture.
  10. Cover and simmer for about 20 minutes, until rice is tender and chicken is fully cooked.
  11. Sprinkle shredded cheese over the top, cover again, and cook until melted.
  12. Garnish with fresh parsley or green onions before serving.
