Ingredients

  • Peach Filling:
  • 6 cups fresh or frozen peaches (peeled and sliced)
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • Cobbler Topping:
  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 cup granulated sugar
  • 6 tablespoons unsalted butter (melted)
  • 3/4 cup whole milk
  • 1 teaspoon vanilla extract
  • Bourbon-Maple Glaze:
  • 1/3 cup maple syrup
  • 2 tablespoons bourbon
  • 2 tablespoons unsalted butter

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, toss sliced peaches with granulated sugar, brown sugar, lemon juice, cornstarch, cinnamon, and nutmeg. Pour into a greased baking dish.
  3. In another bowl, whisk together flour, baking powder, salt, and sugar. Add milk, melted butter, and vanilla. Stir until just combined.
  4. Spoon batter evenly over the peach mixture. It’s okay if some fruit peeks through.
  5. Bake for 40–45 minutes, until the topping is golden and the peaches are bubbling.
  6. While the cobbler bakes, prepare the glaze: Simmer maple syrup, bourbon, and butter in a small saucepan over medium heat until slightly thickened (about 5 minutes).
  7. Drizzle the warm glaze over the cobbler right after it comes out of the oven.
  8. Serve warm, optionally with vanilla ice cream.
