Soft, hearty dinner rolls made with tender oats and rich molasses, offering an old-fashioned sweetness and comforting texture perfect for cozy meals or holiday tables.

Ingredients

  • 1 cup rolled oats
  • 1 cup boiling water
  • 2 1/4 teaspoons active dry yeast (1 packet)
  • 1/4 cup warm water (110°F / 45°C)
  • 1/4 cup molasses
  • 4 tablespoons butter, melted
  • 1/2 cup milk, warm
  • 1 teaspoon salt
  • 3 1/2 to 4 cups all-purpose flour

Instructions

  1. Pour boiling water over the rolled oats in a large bowl. Let sit until softened and cooled slightly.
  2. In a separate bowl, dissolve yeast in warm water and let stand until foamy, about 5 minutes.
  3. Stir molasses, melted butter, milk, and salt into the yeast mixture.
  4. Add the softened oats and mix well.
  5. Gradually add flour, mixing until a soft dough forms.
  6. Knead the dough on a floured surface for 8–10 minutes, until smooth and elastic.
  7. Place dough in a greased bowl, cover, and let rise until doubled in size, about 1 hour.
  8. Punch down the dough, divide into 12 equal portions, and shape into rolls.
  9. Arrange rolls in a greased baking dish, cover, and let rise again until puffy, about 30 minutes.
  10. Bake in a preheated 375°F (190°C) oven for 20–25 minutes, until golden brown.
  11. Brush with butter while warm before serving.

Notes

  • Rolled oats work best; avoid quick oats.
  • Replace part of the flour with whole wheat flour for a heartier roll.
  • Brush with honey butter for a sweeter finish.
  • Dense rolls usually mean the dough needed more rising time.
