These no-bake white chocolate cheesecakes with mulled wine fruit are a festive, creamy dessert with a warmly spiced fruit topping. Served in individual portions, they’re elegant, make-ahead friendly, and perfect for holiday gatherings or cozy nights in.

Ingredients

  • 200g digestive biscuits (or graham crackers), crushed
  • 100g unsalted butter, melted
  • 200g white chocolate
  • 300g cream cheese
  • 200ml whipping cream
  • 1 tsp vanilla extract
  • 50g powdered sugar
  • 250ml red wine
  • Zest of 1 orange
  • 1 cinnamon stick
  • 2 star anise
  • 4 cloves
  • 75g sugar
  • 300g mixed berries (fresh or frozen)

Instructions

  1. Crush the digestive biscuits and mix with melted butter. Press the mixture into the bottom of small serving glasses or jars.
  2. Gently melt the white chocolate and let it cool slightly.
  3. In a large bowl, beat the cream cheese with powdered sugar and vanilla extract until smooth.
  4. In a separate bowl, whip the cream to soft peaks, then fold it into the cream cheese mixture along with the cooled white chocolate.
  5. Spoon or pipe the cheesecake filling over the biscuit bases. Chill for at least 4 hours or overnight to set.
  6. While chilling, prepare the mulled wine fruit. Simmer red wine with orange zest, cinnamon, star anise, cloves, and sugar until slightly reduced.
  7. Add the berries and cook gently until softened and infused with the mulled wine flavors.
  8. Let the fruit mixture cool completely.
  9. Before serving, spoon the mulled wine fruit over the chilled cheesecakes.

  • For a non-alcoholic version, use spiced grape or cranberry juice.
  • Swap white chocolate with dark or milk chocolate for a richer flavor.
