No Bake Brownie Bites are rich, fudgy, and naturally sweetened snacks made with wholesome ingredients like dates, cocoa powder, and nuts. These easy, no-bake treats are perfect for a quick dessert, snack, or lunchbox addition.

Ingredients

  • 1 cup Medjool dates, pitted
  • 1 cup raw almonds or walnuts
  • 1/4 cup unsweetened cocoa powder
  • 1 tsp vanilla extract
  • Pinch of salt
  • Optional: mini chocolate chips, shredded coconut, or chia seeds for coating

Instructions

  1. Add the pitted dates to a food processor and pulse until a sticky paste forms.
  2. Add the nuts, cocoa powder, vanilla extract, and salt. Blend until thick and mixture holds together when pressed.
  3. If the mixture is too dry, add 1 tsp of water at a time until it comes together.
  4. Scoop small portions and roll into bite-sized balls using your hands.
  5. Roll in optional coatings like shredded coconut, cocoa powder, or chia seeds if desired.
  6. Place on a tray and chill in the fridge for about 30 minutes to firm up before serving.
