A creamy, herb-infused Boursin chicken bake featuring tender seared chicken breasts smothered in a rich garlic and fine herbs cheese sauce, perfect for an easy yet impressive dinner.

Ingredients

  • 4 boneless, skinless chicken breasts
  • Salt, to taste
  • Black pepper, to taste
  • 1 tablespoon olive oil
  • 1 small shallot or onion, finely diced
  • 3 cloves garlic, minced
  • 1 package (5.2 ounces) Boursin garlic and fine herbs cheese
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1/2 teaspoon dried thyme (optional)
  • 1/2 cup cherry tomatoes, halved (optional)
  • Fresh parsley, chopped (optional)

Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease a baking dish.
  2. Season the chicken breasts with salt and black pepper on both sides.
  3. Heat olive oil in a skillet over medium heat and sear the chicken for 3–4 minutes per side until lightly golden. Transfer to the prepared baking dish.
  4. In the same skillet, sauté the shallot and garlic for 1–2 minutes until fragrant.
  5. Stir in the chicken broth and heavy cream. Add the Boursin cheese and whisk until melted and smooth.
  6. Pour the sauce over the chicken in the baking dish. Top with cherry tomatoes if using.
  7. Bake uncovered for 20–25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
  8. Let rest for a few minutes, garnish with fresh parsley, and serve.

  • Boneless, skinless chicken thighs can be substituted; adjust cooking time as needed.
  • Searing adds extra flavor but can be skipped for convenience.
  • Add fresh spinach or mushrooms for additional flavor and texture.
