A comforting grilled cheese sandwich with a Mediterranean twist, layered with sautéed spinach, melty mozzarella, tangy feta, and savory add-ins for a fresh yet cozy meal.

Ingredients

  • 2 slices bread
  • 1 tablespoon olive oil or butter
  • 1 cup fresh spinach
  • 1 clove garlic, minced
  • 1/2 cup shredded mozzarella cheese
  • 2 tablespoons crumbled feta cheese
  • 2 tablespoons chopped sun-dried tomatoes
  • 1 tablespoon sliced black olives

Instructions

  1. Heat a small pan over medium heat with a drizzle of olive oil.
  2. Add spinach and garlic and sauté just until wilted. Remove from heat.
  3. Spread butter or olive oil on one side of each bread slice.
  4. On the unbuttered side of one slice, layer mozzarella, spinach, feta, sun-dried tomatoes, and olives.
  5. Top with the second slice of bread, buttered side facing out.
  6. Place the sandwich in a skillet over medium heat and cook until golden and crisp.
  7. Flip carefully and cook until the second side is golden and the cheese is fully melted.
  8. Remove from the pan, rest briefly, slice, and serve.

Notes

  • Frozen spinach can be used if fully thawed and well squeezed.
  • Sourdough or rustic bread works especially well.
  • Roasted red peppers add extra sweetness.
  • Best enjoyed fresh for optimal texture.
