Ingredients

  • 1 pound ground chicken
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • ½ small onion, finely chopped
  • 1 teaspoon dried oregano
  • ½ teaspoon dried thyme
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup cherry tomatoes, halved
  • ⅓ cup sliced Kalamata olives
  • ½ cup fresh spinach
  • ½ cup crumbled feta cheese
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chopped onion and cook until soft and fragrant, about 2–3 minutes.
  3. Stir in minced garlic and cook for 30 seconds.
  4. Add ground chicken and cook until browned, breaking it apart as it cooks.
  5. Season with oregano, thyme, paprika, salt, and black pepper. Stir to coat evenly.
  6. Add cherry tomatoes and olives, and cook for 2–3 minutes until tomatoes begin to soften.
  7. Stir in spinach and cook just until wilted.
  8. Remove from heat and sprinkle with crumbled feta and chopped parsley before serving.
