This Mediterranean ground beef stir-fry is a 30-minute one-pan meal with lean ground beef, fresh vegetables, and warm spices. Healthy, versatile, and bursting with flavor, it’s perfect for busy weeknights or meal prep.

Ingredients

  • 1 lb lean ground beef
  • 2 tbsp olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 bell peppers, chopped
  • 1 medium zucchini, sliced
  • 1 cup cherry tomatoes, halved
  • 2 cups fresh spinach or kale
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1 tsp dried oregano
  • Salt and black pepper, to taste
  • 2 tbsp fresh parsley, chopped
  • Juice of 1 lemon

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add onion and garlic; cook until softened.
  3. Stir in ground beef, cooking until browned and crumbled.
  4. Season with cumin, paprika, oregano, salt, and pepper.
  5. Add bell peppers and zucchini; cook until tender.
  6. Stir in cherry tomatoes and spinach; cook until spinach wilts and tomatoes soften.
  7. Finish with lemon juice and fresh parsley before serving.

Notes

  • Swap beef for ground turkey, chicken, or lamb.
  • Use eggplant, mushrooms, or broccoli in place of (or along with) the vegetables.
  • Serve over rice, couscous, quinoa, or in warm pita bread.
  • For a low-carb version, serve on its own or with cauliflower rice.
  • Add red pepper flakes or cayenne for heat.
