Marry Me Tortellini is a rich and creamy one-pan pasta dish made with cheese tortellini, sun-dried tomatoes, garlic, and a luscious parmesan cream sauce. A quick, romantic, and comforting meal ready in under 30 minutes.

Ingredients

  • 1 package (about 18 oz) cheese tortellini (fresh or refrigerated)
  • 1 tbsp olive oil or butter
  • 3 cloves garlic, minced
  • 1/3 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 1/2 cup vegetable broth
  • 3/4 cup grated parmesan cheese
  • 1 tsp Italian seasoning
  • 1/4 tsp red pepper flakes (optional)
  • Salt and black pepper to taste
  • Fresh basil or parsley, chopped (for garnish)

Instructions

  1. Cook the tortellini according to package directions. Drain and set aside.
  2. In a large skillet, heat olive oil or butter over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  3. Add sun-dried tomatoes and cook for another minute.
  4. Pour in the heavy cream and vegetable broth. Stir in parmesan cheese, Italian seasoning, and red pepper flakes if using.
  5. Let the sauce simmer for 4–5 minutes, stirring frequently, until slightly thickened.
  6. Add the cooked tortellini and toss to coat in the sauce.
  7. Season with salt and pepper to taste. Garnish with fresh herbs and serve hot.

  • Use half-and-half for a lighter version of the sauce.
  • Add spinach, kale, or cooked protein (like chicken or shrimp) for a heartier meal.
  • Make it vegetarian by using veggie broth and vegetarian parmesan.
