Ingredients

  • 4 salmon fillets (skin-on or skinless)
  • Salt and black pepper, to taste
  • 1/2 tsp paprika (optional)
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 4 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes in oil, chopped
  • 1/4 tsp red pepper flakes (optional)
  • 1/2 cup chicken broth or dry white wine
  • 1 cup heavy cream
  • 1/3 cup grated Parmesan cheese
  • Fresh basil or parsley, chopped (for garnish)

Instructions

  1. Season salmon with salt, pepper, and optional paprika.
  2. Heat olive oil in a large skillet over medium-high heat. Sear salmon skin-side down for 4–5 minutes per side until golden and cooked through. Remove and set aside.
  3. In the same skillet, reduce heat to medium. Melt butter and sauté garlic for 1 minute until fragrant.
  4. Add sun-dried tomatoes and red pepper flakes. Stir and cook for another minute.
  5. Pour in chicken broth or wine to deglaze the pan. Simmer for 2–3 minutes.
  6. Stir in heavy cream and Parmesan. Cook for 2–3 minutes until slightly thickened.
  7. Return salmon to the skillet, spoon sauce over top, and simmer for 2–3 minutes more to meld flavors.
  8. Garnish with fresh basil or parsley. Serve hot with your favorite sides.
