Marry Me Chickpeas is a creamy, comforting vegetarian dish that combines chickpeas with a rich tomato and sun-dried tomato cream sauce. It’s quick, cozy, and perfect served over pasta, rice, or crusty bread.

Ingredients

  • 2 cans chickpeas, drained and rinsed
  • 2 tbsp olive oil
  • 3 garlic cloves, minced
  • 1 small onion or shallot, finely chopped
  • 1/3 cup sun-dried tomatoes in oil, chopped
  • 2 tbsp tomato paste
  • 3/4 cup heavy cream or coconut milk
  • 1/2 cup vegetable broth
  • 1 tsp Italian seasoning (or 1/2 tsp each oregano, thyme, and basil)
  • 1/4 tsp red pepper flakes (optional)
  • Salt and black pepper to taste
  • Fresh basil or parsley, chopped (for garnish)

Instructions

  1. In a large skillet, heat olive oil over medium heat. Sauté onion or shallot until soft, about 3–4 minutes.
  2. Add garlic and sun-dried tomatoes. Cook for 1–2 minutes until fragrant.
  3. Stir in tomato paste and cook for another minute to enhance flavor.
  4. Pour in vegetable broth and cream (or coconut milk). Stir to form a smooth sauce.
  5. Add Italian seasoning, red pepper flakes (if using), salt, and pepper. Mix well.
  6. Stir in chickpeas and simmer for 10–15 minutes, allowing them to absorb the sauce.
  7. Taste and adjust seasoning. Garnish with chopped basil or parsley before serving.
