Marry Me Chicken Pasta is a creamy, flavorful pasta dish featuring tender chicken, sun-dried tomatoes, and a parmesan-infused cream sauce. It’s so delicious, it might just spark a proposal!

Ingredients

  • 2 boneless, skinless chicken breasts
  • Salt and black pepper, to taste
  • 1/2 tsp paprika
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 3 garlic cloves, minced
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated parmesan cheese
  • 1/3 cup sun-dried tomatoes (in oil), drained and chopped
  • 1/4 tsp red pepper flakes (optional)
  • Fresh basil or parsley, chopped (for garnish)
  • 8 oz pasta (penne, fettuccine, or rigatoni)

Instructions

  1. Season the chicken breasts with salt, pepper, and paprika on both sides.
  2. In a large skillet, heat olive oil and sear the chicken for 4–5 minutes per side, or until fully cooked. Remove and set aside.
  3. In the same pan, melt the butter and sauté the minced garlic until fragrant.
  4. Add chicken broth and scrape any brown bits from the pan.
  5. Stir in the heavy cream, parmesan cheese, sun-dried tomatoes, and red pepper flakes (if using). Let the sauce simmer until creamy and smooth.
  6. Meanwhile, cook pasta in a separate pot until al dente, then drain.
  7. Slice the cooked chicken and return it to the pan to warm in the sauce.
  8. Add the cooked pasta to the pan, stirring to coat it well with the sauce.
  9. Garnish with chopped fresh basil or parsley and serve warm.

Notes

  • Use chicken thighs instead of breasts for a juicier option.
  • Lighten it up with half-and-half instead of cream.
  • Add spinach or mushrooms for extra veggies.
  • Shrimp or sausage can be used as protein alternatives.
  • Adjust spice with more or less red pepper flakes.
