Golden and crispy on the outside with a tender, cheesy center, these low-carb broccoli cheese rounds are a flavorful and satisfying snack perfect for a light or keto-friendly option.

Ingredients

  • 3 cups (300 g) broccoli florets
  • 1 cup (100 g) shredded cheddar cheese
  • 1/2 cup (50 g) grated parmesan cheese
  • 2 large eggs
  • 1/2 cup (50 g) almond flour
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil or cooking spray

Instructions

  1. Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.
  2. Steam or boil the broccoli until tender, then drain well, chop finely, and allow to cool.
  3. In a bowl, combine chopped broccoli, cheddar cheese, parmesan cheese, eggs, almond flour, garlic powder, onion powder, salt, and black pepper.
  4. Mix until the ingredients are well combined.
  5. Shape the mixture into small rounds and place them on the prepared baking sheet.
  6. Lightly brush or spray the rounds with olive oil.
  7. Bake for 20–25 minutes, flipping halfway through, until golden and crispy.
  8. Remove from the oven and let cool slightly before serving.
