Ingredients

  • 1 cup granulated sugar

  • 1 teaspoon pure vanilla extract
  • 1/2 cup unsalted butter, melted and cooled
  • For the frosting:
  • 1 1/2 cups powdered sugar
  • 1/4 cup unsalted butter, softened
  • 23 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F. Grease and flour two 8-inch round cake pans.
  2. In a medium bowl, whisk together cake flour, baking powder, and salt.
  3. In a large bowl, whip egg whites until stiff peaks form, gradually adding granulated sugar.
  4. Gently fold in dry ingredients, alternating with milk, without deflating egg whites.
  5. Stir in melted butter and vanilla until just combined.
  6. Divide batter evenly between pans. Bake 22–25 minutes, or until a toothpick comes out clean.
  7. Cool cakes completely before frosting.
  8. For frosting: beat butter with powdered sugar, milk, and vanilla until fluffy.
  9. Frost cake layers lightly and evenly.
