Ingredients

  • 1 cup fresh lemon juice (about 46 lemons)
  • 1 cup granulated sugar
  • 1 cup water
  • Zest of 1 lemon

Instructions

  1. In a saucepan over medium heat, combine sugar and water. Stir until sugar dissolves completely. Simmer gently, then remove from heat and let cool.
  2. In a bowl, stir together fresh lemon juice and lemon zest. Add cooled syrup and mix well.
  3. Pour mixture into an ice cream maker. Churn according to manufacturer’s directions, usually 20–25 minutes, until it reaches a slushy texture.
  4. Transfer sorbet to an airtight container and freeze for at least 4 hours, until firm and scoopable.
  5. Scoop into bowls or cones and enjoy immediately. Let sit at room temp 5–10 minutes if too firm.
