Ingredients

  • 1 cup all-purpose flour
  • 1 cup old-fashioned rolled oats
  • 1/2 cup light brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, melted
  • 2 lemons, zested and juiced (about 1/3 cup juice)
  • 2 large eggs
  • 1 can (14 oz) sweetened condensed milk
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8 or 9×9 inch baking pan with parchment paper.
  2. In a large bowl, mix flour, oats, brown sugar, granulated sugar, baking powder, and salt. Stir in melted butter until the mixture is crumbly.
  3. Press two-thirds of the oat mixture into the bottom of the prepared pan to form the crust.
  4. In another bowl, whisk together sweetened condensed milk, lemon juice, lemon zest, eggs, and vanilla extract until smooth.
  5. Pour the lemon mixture over the crust, spreading it evenly. Top with the remaining oat mixture as a crumble.
  6. Bake for 30–35 minutes, or until the top is golden and the filling is set.
  7. Let cool completely in the pan, then refrigerate for at least 1 hour before slicing into bars.
