Lemon ginger turmeric chicken and rice soup is a comforting and nourishing soup made with shredded chicken, rice, and aromatic ingredients like turmeric, ginger, and lemon. It’s soothing, vibrant, and perfect for chilly days or when you need a wellness boost.

Ingredients

  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated or minced
  • 1 tsp ground turmeric
  • 2 cups cooked chicken breast or thighs, shredded
  • 6 cups chicken broth or stock
  • 1 1/2 cups cooked white or brown rice
  • 23 tbsp fresh lemon juice (to taste)
  • Salt, to taste
  • Black pepper, to taste
  • Fresh parsley or cilantro (optional, for garnish)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery, and sauté for 5–7 minutes until softened.
  2. Stir in garlic, ginger, and turmeric. Cook for 1 minute until fragrant.
  3. Add shredded chicken and chicken broth. Bring to a gentle simmer.
  4. Stir in cooked rice and let the soup simmer for 10–15 minutes to blend the flavors.
  5. Stir in fresh lemon juice. Taste and adjust seasoning with salt and pepper.
  6. Serve hot, garnished with fresh parsley or cilantro if desired.

Notes

  • Add spinach or kale in the last few minutes for extra greens.
  • Use red pepper flakes or cayenne for heat.
  • Quinoa can be used in place of rice.
  • Rotisserie chicken makes this even faster.
  • Add extra broth or water when reheating as rice absorbs liquid over time.
