Lemon crumb bars are buttery, sweet, and tangy dessert bars featuring a bright lemon filling between layers of soft, crumbly crust. Made with pantry staples and fresh lemons, they’re simple yet delicious, perfect for any season or occasion.

Ingredients

  • For the crumb crust and topping:
  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup (1 stick) unsalted butter, cold and cubed
  • 1 large egg
  • 1 tsp vanilla extract
  • For the lemon filling:
  • 1 (14 oz) can sweetened condensed milk
  • 1/2 cup fresh lemon juice (about 23 lemons)
  • 1 tbsp lemon zest
  • 2 large egg yolks

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
  2. In a large bowl, mix flour, granulated sugar, brown sugar, baking powder, and salt. Cut in cold butter using a pastry cutter or fingers until mixture resembles coarse crumbs.
  3. Stir in egg and vanilla until crumbly dough forms.
  4. Press slightly more than half of the mixture into the bottom of the prepared pan to form the crust.
  5. In a separate bowl, whisk together sweetened condensed milk, lemon juice, lemon zest, and egg yolks until smooth.
  6. Pour lemon filling over the crust and spread evenly. Crumble remaining dough mixture over the top.
  7. Bake for 30–35 minutes, or until top is golden and center is set.
  8. Cool completely, then refrigerate for at least 1–2 hours before slicing.
