Lemon Blueberry Cottage Cheese Protein Bites are soft, tangy no-bake snacks made with cottage cheese, almond flour, and blueberries. These protein-packed bites are perfect for quick, energizing snacks or a light breakfast.

Ingredients

  • 1/2 cup cottage cheese
  • 3/4 cup almond flour (plus more if needed)
  • 12 tbsp honey or maple syrup
  • 1 tsp lemon zest
  • 1 tbsp lemon juice
  • 1/2 tsp vanilla extract
  • 1/3 cup fresh or dried blueberries
  • Optional: 1–2 tbsp protein powder, 1 tsp chia seeds, shredded coconut for rolling

Instructions

  1. In a food processor or blender, blend cottage cheese, honey (or maple syrup), lemon zest, lemon juice, and vanilla until smooth and creamy.
  2. Transfer the mixture to a bowl and stir in almond flour and blueberries. If the dough is too soft, add more almond flour a little at a time until it’s firm enough to roll.
  3. Chill the mixture for 15–20 minutes in the fridge to firm up.
  4. Once chilled, scoop and roll into bite-sized balls (about 12–14).
  5. Store the bites in an airtight container in the fridge for up to 5 days or freeze for longer storage.

Notes

  • Use dried blueberries for a chewier bite and to prevent excess moisture.
  • Add protein powder to boost nutritional value.
  • Roll in coconut for a tropical twist or mix in chia seeds for texture.
