Ingredients

  • 4 cups broccoli florets (fresh or frozen)
  • 2 tablespoons butter
  • ½ small onion, finely chopped
  • 2 cloves garlic, minced
  • 3 cups chicken broth or bone broth
  • 1 cup heavy cream
  • 2 cups shredded sharp cheddar cheese
  • 4 oz cream cheese
  • Salt and pepper, to taste
  • ½ teaspoon ground mustard (optional)
  • Pinch of paprika or cayenne (optional)

Instructions

  1. In a large pot, melt butter over medium heat. Add onion and garlic; sauté until soft and fragrant.
  2. Add broccoli and pour in the chicken broth. Bring to a gentle boil, then simmer until broccoli is tender (10–15 minutes).
  3. Reduce heat to low and stir in the cream cheese until fully melted.
  4. Pour in heavy cream and stir gently—do not boil.
  5. Gradually add shredded cheddar cheese, stirring until smooth and creamy.
  6. Season with salt, pepper, ground mustard, and paprika or cayenne if desired.
  7. For a smoother texture, blend part of the soup using an immersion blender. Serve hot.
