Italian Quesadillas combine the crispy, cheesy goodness of classic quesadillas with bold Italian flavors like pizza sauce, basil, and rotisserie chicken. Quick, kid-friendly, and endlessly customizable, these fusion quesadillas make a perfect weeknight meal or snack—ready in just 20 minutes.

Ingredients

  • 4 medium flour tortillas
  • 16 oz rotisserie chicken, chopped or shredded
  • 2 tablespoons fresh basil, chopped
  • 1 cup part-skim mozzarella cheese, shredded
  • ½ jar (about 135g) pizza sauce
  • Olive oil or cooking spray, as needed

Instructions

  1. Heat a nonstick skillet over medium-low heat and coat lightly with olive oil or cooking spray.
  2. Place a tortilla in the skillet. On one half, layer rotisserie chicken, basil, shredded mozzarella, and a spoonful of pizza sauce.
  3. Once the cheese starts to melt and the bottom is golden, fold the tortilla over the filling and press gently with a spatula.
  4. Flip and cook for 1–2 more minutes until both sides are crisp and golden brown.
  5. Remove from skillet, slice into wedges, and serve hot.
