Ingredients

  • 2 boneless, skinless chicken breasts (sliced or pounded thin)
  • 1/2 cup all-purpose flour
  • 2 eggs, beaten
  • 1 cup Italian-style breadcrumbs or panko
  • 1/4 cup grated Parmesan cheese
  • 1/2 tsp garlic powder
  • Salt and black pepper to taste
  • Olive oil (for frying)
  • 1.5 cups cherry or grape tomatoes, halved
  • 1/4 cup fresh basil leaves, chopped or torn
  • 2 tbsp olive oil (for tomato mix)
  • 1 tbsp balsamic vinegar or glaze
  • Salt and pepper to taste
  • 8 oz burrata cheese, torn into pieces
  • Optional: extra basil leaves, lemon wedges, crusty bread, or arugula salad

Instructions

  1. Slice or pound chicken into cutlets and season with salt, pepper, and garlic powder.
  2. Set up breading station: flour in one bowl, eggs in another, and breadcrumbs mixed with Parmesan in a third.
  3. Dredge chicken in flour, dip in egg, and coat with breadcrumb mixture.
  4. Heat olive oil in a skillet over medium heat. Fry chicken for 3–4 minutes per side until golden and cooked through. Transfer to wire rack or paper towels.
  5. In a bowl, mix tomatoes, basil, olive oil, balsamic, salt, and pepper. Let sit while chicken cooks.
  6. Top warm chicken with tomato mixture and pieces of burrata. Garnish with extra basil and serve immediately.

Notes

  • Substitute burrata with fresh mozzarella or goat cheese if needed.
  • Add red pepper flakes to tomato mix for heat.
  • Use sun-dried tomatoes when fresh ones are out of season.
