Ingredients

  • 1 cup plain or vanilla yogurt
  • 1 1/2 cups all-purpose flour
  • 3/4 cup sugar
  • 3 large eggs
  • 2 tsp baking powder
  • 1/2 cup neutral oil (vegetable or sunflower)
  • 1 tsp vanilla extract
  • 1 tsp lemon zest (optional)
  • 1/4 tsp salt
  • Optional toppings: powdered sugar, berries, whipped cream, or glaze

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan or 8-inch round cake pan.
  2. In a large bowl, whisk together the yogurt, sugar, eggs, and vanilla extract until smooth.
  3. Slowly mix in the oil until fully combined.
  4. Sift in the flour, baking powder, salt, and lemon zest (if using), then stir gently until just combined.
  5. Pour the batter into the prepared pan and smooth the top.
  6. Bake for 35–45 minutes, or until a toothpick inserted in the center comes out clean.
  7. Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
  8. Serve plain, dusted with powdered sugar, or topped with fruit or glaze.
