A light and flavorful zucchini sauce made with tender sautéed zucchini, garlic, herbs, and parmesan cheese. This silky, comforting sauce pairs beautifully with pasta, grains, or roasted vegetables and comes together with simple ingredients.

Ingredients

  • 2 medium zucchinis, diced
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • ¼ cup onion, finely chopped
  • ¼ cup grated parmesan cheese
  • ½ teaspoon dried oregano
  • ½ teaspoon dried basil
  • Salt, to taste
  • Black pepper, to taste
  • ¼ cup vegetable broth or pasta water
  • 1 tablespoon butter (optional)
  • Fresh parsley or basil for garnish (optional)

Instructions

  1. Heat olive oil in a medium skillet over medium heat.
  2. Add the chopped onion and cook for a few minutes until softened and fragrant.
  3. Stir in the minced garlic and cook briefly until aromatic.
  4. Add the diced zucchini and cook for 8–10 minutes, stirring occasionally, until the zucchini softens and begins to break down.
  5. Season with oregano, basil, salt, and black pepper.
  6. If the mixture becomes too thick, add vegetable broth or pasta water a little at a time to create a smoother consistency.
  7. Once the zucchini is very tender, lightly mash it with the back of a spoon or blend briefly for a smoother sauce.
  8. Stir in the grated parmesan cheese and optional butter, cooking for another minute until well combined.
  9. Garnish with fresh parsley or basil and serve warm.
