Irresistible Cinnamon Roll Cookies are slice-and-bake cookies with swirls of cinnamon-sugar and a sweet glaze on top. Soft, chewy, and buttery, they deliver all the comfort of a cinnamon roll in a simple cookie form.

Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 2 tsp vanilla extract
  • 1/3 cup brown sugar (for filling)
  • 1 tbsp ground cinnamon
  • 1 cup powdered sugar (for glaze)
  • 23 tbsp milk or cream (for glaze)

Instructions

  1. Cream butter and granulated sugar until light and fluffy. Beat in egg and vanilla.
  2. In a separate bowl, whisk together flour, baking powder, and salt. Gradually mix into the butter mixture to form a soft dough.
  3. Divide dough in half. Roll each portion into a rectangle between parchment sheets. Chill for 30 minutes.
  4. Mix brown sugar and cinnamon. Spread over chilled dough rectangles.
  5. Roll each dough rectangle tightly into a log. Wrap and chill for at least 1 hour until firm.
  6. Preheat oven to 350°F (175°C). Line baking sheets with parchment.
  7. Slice logs into 1/2-inch rounds. Place on baking sheets and bake 10–12 minutes, until just golden at edges.
  8. Cool completely on wire racks. Whisk powdered sugar and milk for glaze. Drizzle over cooled cookies.

Notes

  • Add a pinch of nutmeg to the filling for extra warmth.
  • Use cream cheese in the dough for richness.
  • Substitute maple syrup in the glaze for a flavor twist.
  • Sprinkle finely chopped nuts in the cinnamon layer for crunch.
