Rich and indulgent salted caramel cheesecake crunch bars with a buttery crust, creamy cheesecake filling, crunchy oat topping, and a luscious caramel drizzle.

Ingredients

  • 2 cups crushed graham crackers or digestive biscuits
  • 1/2 cup melted butter
  • 2 tbsp granulated sugar
  • 16 oz (450g) cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream or heavy cream

Crunch Topping:

  • 1/2 cup brown sugar
  • 1/2 cup rolled oats
  • 1/2 cup all-purpose flour
  • 1/3 cup butter, softened
  • 1/3 cup chopped nuts (optional)

Salted Caramel:

  • 1/2 cup caramel sauce
  • 1/2 tsp sea salt

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking pan with parchment paper.
  2. Mix crushed graham crackers, melted butter, and sugar, then press firmly into the bottom of the pan to form the crust.
  3. In a bowl, beat cream cheese until smooth, then add sugar, eggs, vanilla, and sour cream, mixing until creamy.
  4. Pour the cheesecake mixture over the crust and smooth the top.
  5. Prepare the crunch topping by combining brown sugar, oats, flour, and butter until crumbly, then mix in nuts if using.
  6. Sprinkle the topping evenly over the cheesecake layer.
  7. Bake for 35–40 minutes, until the center is set and the top is golden.
  8. Allow to cool completely, then drizzle with caramel sauce and sprinkle sea salt on top.
  9. Chill in the refrigerator for at least 2 hours before slicing into bars.
