A light and refreshing honeydew blackberry salad with bright lime, fresh mint, and a touch of honey for natural sweetness.

Ingredients

  • 3 cups honeydew melon, cubed
  • 1 cup fresh blackberries
  • 1 tablespoon fresh lime juice
  • 1 teaspoon honey (optional)
  • 1 tablespoon fresh mint, chopped
  • Pinch of salt

Instructions

  1. Cut the honeydew melon into bite-sized cubes and place them in a large bowl.
  2. Gently rinse and thoroughly dry the blackberries, then add them to the bowl.
  3. Drizzle the fresh lime juice over the fruit and add honey if desired for extra sweetness.
  4. Sprinkle in the chopped mint and a small pinch of salt to enhance the flavors.
  5. Gently toss everything together, being careful not to crush the blackberries.
  6. Chill the salad for 15 to 20 minutes before serving to allow the flavors to meld.

Notes

  • Add crumbled feta for a sweet and salty contrast.
  • Include thinly sliced cucumber or blueberries for extra freshness and color.
  • Sprinkle toasted almonds or pistachios on top for added crunch.
  • For dessert, serve with a spoonful of Greek yogurt.
  • Store in an airtight container in the refrigerator for up to 2 days; best enjoyed within the first day.
  • Do not freeze, as the fruit texture may become mushy once thawed.
  • Add mint just before serving if preparing ahead to keep it fresh and vibrant.
