A crisp and refreshing salad featuring sweet Honeycrisp apples, tangy feta cheese, toasted nuts, and a bright honey-Dijon dressing for the perfect balance of sweet and savory flavors.

Ingredients

  • 2 large Honeycrisp apples, thinly sliced
  • 6 cups mixed greens
  • 1/2 cup crumbled feta cheese
  • 1/3 cup chopped toasted walnuts or pecans
  • 1/4 small red onion, thinly sliced
  • 2 tablespoons dried cranberries
  • For the dressing:
  • 3 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Wash and thoroughly dry the mixed greens, then place them in a large salad bowl.
  2. Core and thinly slice the Honeycrisp apples, keeping the skin on for extra texture and color.
  3. Add the sliced apples, red onion, dried cranberries, and toasted nuts to the bowl with the greens.
  4. In a small bowl or jar, whisk together olive oil, apple cider vinegar, honey, Dijon mustard, salt, and black pepper until smooth.
  5. Drizzle the dressing over the salad just before serving and toss gently to coat evenly.
  6. Sprinkle the crumbled feta cheese on top and serve immediately.
