Ingredients

  • 3 overripe bananas, mashed
  • 1 ¾ cups all-purpose flour
  • ½ cup honey
  • ½ cup unsalted butter, melted
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • Optional add-ins: chopped walnuts, chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Grease or line a loaf pan with parchment paper.
  2. In a large bowl, mash bananas until smooth.
  3. Stir in melted butter, honey, eggs, and vanilla extract.
  4. In a separate bowl, whisk together flour, baking soda, and salt.
  5. Fold dry ingredients into wet ingredients until just combined.
  6. Pour batter into prepared loaf pan and smooth the top.
  7. Bake for 60 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
