A warm and comforting honey glazed corn casserole with a soft, creamy texture and bursts of sweet corn, perfectly balanced with a touch of honey for a delicious side dish.

Ingredients

  • 2 cups (300 g) corn kernels (fresh, canned, or frozen, drained)
  • 1 can (400 g) cream-style corn
  • 1/2 cup (115 g) butter, melted
  • 2 large eggs
  • 1 cup (240 g) sour cream
  • 1/2 cup (120 ml) milk
  • 1/4 cup (60 ml) honey
  • 1 cup (150 g) cornmeal or cornbread mix
  • 1 cup (100 g) shredded cheddar cheese (optional)
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Preheat the oven to 180°C (350°F) and lightly grease a baking dish.
  2. In a large bowl, combine the corn kernels, cream-style corn, melted butter, eggs, sour cream, milk, and honey. Mix until well combined.
  3. Stir in the cornmeal or cornbread mix until fully incorporated.
  4. Season with salt and black pepper. Fold in shredded cheddar cheese if using.
  5. Pour the mixture into the prepared baking dish and spread evenly.
  6. Bake for 40–45 minutes, or until the top is golden and the center is set.
  7. Remove from the oven and let it cool slightly before serving.

  • Mix in cooked bacon bits for a smoky flavor.
  • Use low-fat dairy and reduce butter for a lighter version.
