Ingredients

  • 1 lb boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 3 cups cooked white or brown rice
  • 1/4 cup honey
  • 1/2 cup BBQ sauce (your favorite variety)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 1 tbsp olive oil or cooking spray
  • Optional: chopped green onions for garnish

Instructions

  1. Season chicken with garlic powder, onion powder, paprika, salt, and pepper.
  2. Heat oil in a skillet over medium heat. Cook chicken until golden brown and fully cooked (about 6–8 minutes).
  3. In a bowl, mix honey and BBQ sauce to create the glaze.
  4. Pour the glaze over the chicken and let simmer for 3–5 minutes until the sauce thickens and coats the chicken.
  5. Serve chicken over warm rice. Garnish with chopped green onions if desired.

Notes

  • Spice it up with red pepper flakes or hot sauce.
  • For a vegetarian version, substitute chicken with tofu or plant-based protein.
  • Great with added veggies like bell peppers, broccoli, or corn.
  • Store leftovers in an airtight container in the fridge for up to 4 days.
  • Reheat with a splash of water or extra sauce to maintain moisture.
