These Homemade Overnight Cinnamon Rolls are soft, fluffy, and filled with rich cinnamon-sugar swirls, finished with a creamy glaze. Prep them the night before for an easy, indulgent morning treat.

Ingredients

  • For the dough:
  • 4 cups all-purpose flour
  • 1 packet (2 1/4 tsp) instant yeast
  • 1/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 3/4 cup warm milk (about 110°F)
  • 1/4 cup unsalted butter, melted
  • 2 large eggs
  • For the filling:
  • 3/4 cup brown sugar
  • 1 tablespoon ground cinnamon
  • 1/4 cup unsalted butter, softened
  • For the cream cheese glaze:
  • 4 oz cream cheese, softened
  • 2 tablespoons unsalted butter, softened
  • 1 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 12 tablespoons milk, as needed

Instructions

  1. In a large bowl, mix warm milk, sugar, melted butter, eggs, and yeast until combined.
  2. Gradually add flour and salt, kneading until a soft, slightly tacky dough forms (5–8 minutes).
  3. Cover and let rise in a warm place until doubled, about 1 to 1½ hours.
  4. Roll the dough out into a large rectangle on a floured surface.
  5. Spread softened butter over the dough, then sprinkle evenly with brown sugar and cinnamon.
  6. Roll the dough tightly into a log, slice into 12 even pieces, and place in a greased 9×13-inch baking dish.
  7. Cover tightly with plastic wrap and refrigerate overnight.
  8. In the morning, let rolls sit at room temperature for 45–60 minutes while preheating the oven to 350°F (175°C).
  9. Bake for 20–25 minutes, until golden brown and bubbly.
  10. While rolls are baking, make the glaze: beat cream cheese and butter until smooth, then add powdered sugar, vanilla, and milk until desired consistency.
  11. Spread glaze over warm rolls and serve.

Notes

  • Add chopped pecans or walnuts to the filling for crunch.
  • Use pumpkin spice or nutmeg for a seasonal twist.
  • Substitute cream cheese glaze with vanilla or maple glaze if desired.
  • To freeze, shape rolls and freeze before final rise. Thaw and rise before baking.
