Ingredients

  • 1 box Jiffy cornbread mix
  • ½ cup onion, grated
  • 1 egg
  • ⅓ cup milk (or as needed for consistency)
  • ¼ cup all-purpose flour (optional, for thicker texture)
  • Oil for frying (vegetable or canola works best)

Instructions

  1. In a medium bowl, combine Jiffy mix, grated onion, egg, and milk. Stir until just blended—don’t overmix.
  2. If the batter is too loose, stir in flour for a thicker texture.
  3. Let batter rest while heating oil in a deep skillet or pot to 350°F (175°C).
  4. Using a spoon or small scoop, drop spoonfuls of batter into hot oil. Fry in batches to avoid overcrowding.
  5. Fry 2–3 minutes per side, until golden brown and crispy.
  6. Remove with a slotted spoon and drain on paper towels. Serve warm with dipping sauces.
