Ingredients

  • 1 package (3 ounces) sugar-free strawberry gelatin mix
  • 1 cup boiling water
  • 1 cup cold water
  • 1 cup plain or vanilla Greek yogurt
  • 1 scoop (about 1/4 cup) vanilla protein powder
  • 1 cup fresh strawberries, chopped
  • 1 cup light whipped topping

Instructions

  1. Dissolve the strawberry gelatin mix in boiling water, stirring until completely dissolved.
  2. Add the cold water and stir to combine.
  3. Allow the mixture to cool to room temperature, but do not let it fully set.
  4. In a separate bowl, whisk together the Greek yogurt and protein powder until smooth.
  5. Gently fold the yogurt mixture into the cooled gelatin until fully combined.
  6. Fold in the whipped topping and chopped strawberries.
  7. Refrigerate for 2–3 hours, or until fully set and fluffy.
  8. Stir lightly before serving and garnish with extra strawberries if desired.
