Ingredients

  • 2 lbs stew beef or chuck roast, cut into bite-sized pieces
  • Salt, to taste
  • Black pepper, to taste
  • 4 cloves garlic, minced
  • 1 tsp onion powder
  • 1 tsp dried thyme
  • 1/2 tsp paprika (optional)
  • 4 tbsp unsalted butter, cubed
  • 1 tbsp olive oil (for searing)
  • 1/2 cup low-sodium beef broth
  • Fresh parsley, chopped (for garnish)
  • Optional: red pepper flakes, to taste

Instructions

  1. Season beef with salt, pepper, onion powder, thyme, and paprika.
  2. In a skillet over medium-high heat, sear beef in olive oil until browned on all sides (optional for added flavor).
  3. Transfer beef to the slow cooker. Add garlic, beef broth, and butter.
  4. Cover and cook on low for 6–8 hours or high for 3–4 hours until tender.
  5. Stir gently to coat beef in the garlic butter sauce.
  6. Garnish with chopped parsley or red pepper flakes before serving.

Notes

  • Skip searing for a faster prep—the flavor will still be great.
  • Add mushrooms or sliced onions for more vegetables.
  • Use ghee or vegan butter to make it dairy-free.
  • Add Worcestershire or soy sauce for a deeper flavor profile.
  • Thicken sauce by adding a cornstarch slurry (1 tbsp cornstarch + 2 tbsp water) in the last 30 minutes of cooking.
