A vibrant and refreshing peach cherry salsa made with juicy summer fruits, fresh herbs, and a tangy lime kick. Perfect as a dip, topping, or light side dish for warm weather meals.

Ingredients

  • 2 fresh peaches, pitted and diced
  • 1 cup fresh cherries, pitted and chopped
  • 1/4 red onion, finely chopped
  • 1 jalapeño, seeded and finely diced (optional)
  • 2 tablespoons fresh cilantro or mint, chopped
  • Juice of 1 lime
  • Salt to taste

Instructions

  1. Pit and chop the peaches and cherries, dice the onion and jalapeño, and chop the herbs.
  2. In a mixing bowl, combine peaches, cherries, onion, and jalapeño.
  3. Drizzle with lime juice, add a pinch of salt, and gently toss to mix.
  4. Fold in chopped herbs and adjust seasoning to taste.
  5. Chill in the refrigerator for 15–20 minutes before serving.

  • Add diced avocado or cucumber for extra texture and freshness.
  • Use serrano pepper or cayenne for more heat.
  • Substitute peaches with nectarines or plums if needed.
  • Best served fresh; store in fridge up to 2 days.
