Ingredients

  • 1 (1-inch) piece fresh ginger, sliced
  • 3 garlic cloves, smashed
  • 1 small onion, quartered
  • 4 cups vegetable or chicken broth
  • 46 oz rice noodles
  • 12 tablespoons soy sauce or tamari
  • 1 teaspoon sesame oil
  • 2 green onions, sliced
  • Optional: mushrooms, bok choy, spinach, tofu, shredded chicken, chili flakes, lime juice

Instructions

  1. Add broth, ginger, garlic, and onion to a pot. Bring to a boil, then simmer for 15–20 minutes.
  2. Meanwhile, cook rice noodles according to package instructions. Rinse under cold water and set aside.
  3. Strain the solids from the broth and return the clear liquid to the pot.
  4. Season with soy sauce and sesame oil, adjusting to taste.
  5. Add optional vegetables or protein and simmer until just tender.
  6. Divide noodles into bowls, ladle broth over, and garnish with green onions or other toppings.
