Ground Turkey Sweet Potato Bake is a hearty, one-pan casserole made with lean ground turkey, sweet potatoes, and warming spices. It’s a cozy, nutritious meal perfect for easy dinners, meal prep, or feeding the whole family.

Ingredients

  • 1 lb ground turkey (lean or extra lean)
  • 2 medium sweet potatoes, peeled and diced
  • 1 tbsp olive oil (plus more for drizzling)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 2 cups spinach or kale (optional)
  • 1 tsp smoked paprika
  • 1 tsp chili powder
  • 1/2 tsp ground cumin
  • 1/2 tsp dried oregano
  • Salt and black pepper, to taste
  • 1/2 cup shredded cheese (optional, for topping)
  • Fresh parsley or green onions, for garnish

Instructions

  1. Preheat oven to 400°F (200°C) and grease a large baking dish.
  2. Heat olive oil in a skillet over medium heat. Sauté onion and garlic until softened.
  3. Add ground turkey and cook until browned, breaking it up with a spoon.
  4. Stir in chopped bell pepper, spinach (if using), paprika, chili powder, cumin, oregano, salt, and pepper. Cook for another 2–3 minutes.
  5. In a large bowl, toss diced sweet potatoes with a drizzle of olive oil and a pinch of salt.
  6. Spread sweet potatoes evenly in the bottom of the baking dish. Top with the turkey mixture.
  7. Cover with foil and bake for 25–30 minutes. Uncover, sprinkle with cheese if using, and bake another 10–15 minutes until sweet potatoes are tender and top is golden.
  8. Let cool slightly before serving. Garnish with parsley or green onions.
