Ingredients

  • 1 lb ground beef
  • 2 medium sweet potatoes, peeled and diced
  • 1 small onion, chopped
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • ½ tsp ground cumin
  • Salt and black pepper, to taste
  • Optional: red pepper flakes, chopped parsley, fried eggs for serving

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add sweet potatoes and cook for 8–10 minutes, stirring occasionally, until beginning to soften and brown.
  3. Push sweet potatoes to the side and add ground beef. Cook, breaking it up, until mostly browned.
  4. Add onion, bell pepper, and garlic. Sauté for 5–7 minutes until veggies are soft.
  5. Stir in smoked paprika, cumin, salt, pepper, and red pepper flakes if using.
  6. Continue cooking until sweet potatoes are fork-tender and everything is well combined.
  7. Garnish with chopped parsley and serve hot. Top with a fried egg if desired.
