Creamy mashed avocado, smoky grilled tomatoes, and crisp sourdough bread come together in under 20 minutes for a healthy, satisfying bite. Ingredients

  • 4 slices sourdough or whole-grain bread
  • 2 ripe avocados
  • 2 large tomatoes, sliced into thick rounds
  • 2 tbsp olive oil
  • 1 clove garlic, minced
  • 1 tbsp lemon juice
  • Salt and black pepper, to taste
  • Fresh parsley or basil, chopped (for garnish)
  • Optional: balsamic glaze for drizzling

Instructions

  1. Toast bread slices until golden and crisp using a toaster or skillet.
  2. Scoop avocado into a bowl and mash with a fork. Mix in lemon juice, salt, and pepper.
  3. Brush tomato slices with olive oil, season with salt and pepper, and grill in a hot skillet or grill pan for 1–2 minutes per side until lightly charred.
