This Green Goddess Salad Sandwich is a refreshing and herb-packed meal made with a chopped green salad tossed in creamy green goddess dressing and layered between soft slices of bread. It’s bright, crunchy, and easy to customize for a satisfying lunch or light dinner.

Ingredients

  • 2 cups finely chopped green cabbage or romaine lettuce
  • 1/2 cucumber, diced
  • 2 green onions or chives, sliced
  • 1/2 avocado (optional)
  • 46 slices sandwich bread (soft or toasted)

For the Green Goddess Dressing:

  • 1/2 cup Greek yogurt or vegan yogurt
  • 1/4 cup fresh parsley
  • 1/4 cup fresh basil or cilantro
  • 1 garlic clove
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Optional: 1/4 avocado or 1 tablespoon nutritional yeast for added creaminess

Instructions

  1. Finely chop the cabbage or romaine, cucumber, and green onions. Add to a large mixing bowl.
  2. In a blender or food processor, combine all dressing ingredients. Blend until smooth and creamy.
  3. Pour the dressing over the chopped vegetables and toss until everything is well coated.
  4. Scoop the dressed salad onto slices of sandwich bread. Top with another slice and press gently.
  5. Serve immediately or wrap and chill for later.
