This classic French-inspired dish is naturally gluten-free, vegetarian, and perfect for holidays or everyday dinners. A sophisticated yet simple recipe ready in just 20 minutes.

Ingredients

  • 1 lb fresh green beans, trimmed
  • 1/3 cup sliced almonds
  • 2 tablespoons unsalted butter
  • 1 clove garlic, minced (optional)
  • 1 tablespoon fresh lemon juice
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Blanch green beans in boiling water for 2–3 minutes until crisp-tender and bright green.
  2. Transfer immediately to an ice bath to stop cooking.
  3. In a skillet, melt butter over medium heat. Add almonds and toast until golden brown (2–3 minutes).
  4. Add garlic (if using) and sauté for 30 seconds.
  5. Add drained green beans and toss to combine and warm through.
  6. Finish with lemon juice, salt, and black pepper to taste.

Notes

  • For added flavor, sauté shallots or red pepper flakes.
  • Swap almonds with pecans, walnuts, or pine nuts.
  • Top with Parmesan for a cheesy finish.
  • Store leftovers in an airtight container in the fridge for up to 3 days.
  • Reheat gently in a skillet to avoid overcooking.
