Greek Grape Pudding, or Moustalevria, is a traditional Greek dessert made with grape juice and thickened with flour or cornstarch. Naturally sweet and spiced, it’s a silky, wholesome pudding that’s both vegan and dairy-free.

Ingredients

  • 4 cups grape juice (preferably from dark grapes or grape must)
  • 1/2 cup all-purpose flour or 1/3 cup cornstarch (for gluten-free)
  • 1/2 cup cold water
  • 1/2 tsp ground cinnamon (optional)
  • 1/4 tsp ground cloves (optional)
  • Chopped walnuts or sesame seeds (for topping, optional)

Instructions

  1. In a bowl, mix flour (or cornstarch) with cold water to form a smooth slurry with no lumps.
  2. In a medium saucepan, bring the grape juice to a gentle simmer over medium heat.
  3. Slowly whisk in the flour slurry into the simmering grape juice, stirring constantly to avoid lumps.
  4. Continue to stir and cook for 10–15 minutes, until the mixture thickens to a pudding consistency.
  5. Stir in cinnamon and cloves, if using, then remove from heat.
  6. Pour the pudding into individual dishes or a shallow pan and let cool to room temperature.
  7. Sprinkle with chopped walnuts or sesame seeds, if desired.
  8. Refrigerate for at least 1 hour if serving chilled, or enjoy at room temperature.

Notes

  • Use cornstarch instead of flour for a gluten-free version.
  • Add honey or grape molasses for extra sweetness after cooling slightly.
  • Spice it up with orange zest or a touch of rose water for added aroma.
  • Layer with granola or crushed biscuits for extra texture.
