This Gourmet BBQ Chicken Pizza is a smoky-sweet, cheesy twist on classic comfort food. Topped with barbecue-sauced chicken, red onion, and two cheeses on a golden crust, it’s easy to make and packed with bold flavor.

Ingredients

  • 1 ball pizza dough (homemade or store-bought), at room temperature
  • 1 tablespoon olive oil
  • ½ teaspoon garlic powder
  • Pinch of salt
  • ¾ cup thick barbecue sauce (preferably Kansas City-style)
  • 1 lb grilled or rotisserie chicken, chopped
  • 23 tablespoons barbecue sauce (to coat chicken)
  • 2 cups shredded mozzarella cheese
  • 1 cup shredded sharp cheddar cheese
  • 1 medium red onion, thinly sliced
  • 2 tablespoons chopped fresh cilantro (for garnish)
  • Optional toppings: Cooked bacon bits, Jalapeño slices, Pineapple chunks, Bell pepper strips, Ranch dressing (for drizzling)

Instructions

  1. Prep the Dough: Let dough rest at room temperature for 30–60 minutes. Stretch into a 12–14″ circle and transfer to an oiled pizza pan or parchment-lined sheet. Brush edges with olive oil, sprinkle with garlic powder and salt. Optional: pre-bake at 450°F for 5–7 minutes.
  2. Prepare Chicken: Grill and chop chicken, then toss with 2–3 tablespoons BBQ sauce. Use rotisserie chicken for ease.
  3. Assemble Pizza: Spread BBQ sauce over the dough. Add half the mozzarella, then BBQ chicken and red onion. Top with remaining mozzarella, cheddar, and optional toppings.
  4. Bake: Preheat oven to 475°F. Bake for 12–15 minutes, rotating once, until crust is golden and cheese is bubbly.
  5. Finish & Serve: Drizzle with extra BBQ sauce, sprinkle with cilantro, and slice into 8 pieces.
