Ingredients

  • 2 cups fresh radishes, thinly sliced
  • 2 tablespoons olive oil

  • 1 teaspoon honey
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh herbs (parsley or chives), chopped

  • 1 cup arugula or mixed greens
  • 2 tablespoons parmesan shavings

Instructions

  1. Wash the radishes thoroughly and slice them as thinly as possible using a sharp knife or mandoline.
  2. Place the sliced radishes in a bowl and add thinly sliced shallots if using.
  3. In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, honey, salt, and black pepper until smooth.
  4. Pour the dressing over the radishes and toss gently to coat evenly.
  5. Sprinkle chopped fresh herbs over the salad.
  6. Add parmesan shavings or greens if desired and lightly toss again.
  7. Serve immediately for the best crisp texture.
